Prociutto & Fresh Mozzarella Melts with Melon Salsa

This is very yummy. Using only the best olive oil & cheese will bring the best results.

Melts:
3 large flour tortillas
Fresh Mozzarella 3 cups shredded
1/4 lb prosciutto thinly sliced

Salsa:
In a small bowl combine the following:
1/2 cantaloupe or favorite melon chopped small
1/4 cup finely chopped red onion
1/4 cup finely chopped red pepper
1 tbs freshly chopped mint
2 tbs freshly chopped Italian Parsley
2 tbs freshly chopped Cilantro
Squeeze of fresh lime
Salt and pepper to taste

Heat a large skillet on Med High heat. Add a drizzle of Olive Oil to the pan twice around. Add tortilla, on one half of the tortilla top with 1 cup of cheese and layer prosciutto. When the bottom is golden brown flip the other half over to cover the cheese. Should look like a 1/2 moon. Grill on both sides until golden. Remove and make the remaining two. Top with Melon Salsa and Crispy Fried Prosciutto. Serves 6 appetizers or 3 entree portions.
