Healthy Low fat Eggplant parmesan. Not fried. Homemade San Marzano tomato-basil sauce. Light hand of fresh mozzarella and pecorino romano cheeses. And summer salad with homemade orange muscat vinegrette. We are enjoying our vegetarian journey.... the benefits of eating a vegan lifestyle out weigh the forgoing of meat and dairy. One day I woke up and just thought how vile it is to eat an animal that is dead. DEAD. And animal protien just rips calcium from our bones not to mention the multitide of other offenses to the human body. Just a thought.
