Mi Huevos Rancheros

What I love about leftovers are the breakfast creations. Left over Tomatillo sauce, refried beans, lightly fried (still soft) corn tortillas (2), medium over eggs topped with cheddar-jack, more green sauce, sauteed onions, & finished with a hefty drizzle red pepper sauce. Served with Louisiana Hotlinks. Of course, for the guy.


& here's my breakfast. I'm working on retaining my girly figure. yay.
