What kind of Cupcake am I?
Crazy Vegan cupcakes. Can you my foodie friends guess what took place of the egg & part of the oil? Here's a clue. It's Yellow Green in color. There maybe a prize for the correct answer. ;) Good luck!
_______Chocolate Cupcakes
Ingredients:
1 1/2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt
1 ,______ Fill in the blank
1 cup pure maple syrup (i had a substitute?)
3/4 cup chocolate almond milk
1/3 cup canola oil
2 tsp Pure vanilla extract
Preheat oven to 350 F. Line cupcake pan with cupcake paper. Whisk together flour, cocoa powder, baking powder, baking soda, and salt in bowl. Purée ______ in a food processor until smooth. Add maple syrup, almond milk, oil, and vanilla, and blend until creamy. Whisk ________ mixture into flour mixture. Bake for 25 minutes.
I made a milk chocolate peanut butter cup & semi sweet chocolate glaze for cupcakes. _______ made for a very moist cupcake. Yum!
Meg got it. Avocado. She had to eat it first. She first guessed banana & I told her she is on the right track as it is a fruit but seems more like a vegetable. Then she guessed it. Oh BTW, you cannot taste the avocado at all.

here i did not have pure maple syrup or imitation as the recipe called for...what did i use instead?
