Blue Corn Chicken Enchiladas



Low in Fat and full of Protein with amazing flavor. Simple

Filling:

2 grilled boneless, skinless chicken breast sliced then shredded (season and grill for 8-10 min. per side)
1 can of drained and rinsed black beans
1 small can of diced green chiles
1/2 a red onion diced very fine
2 cups of shredded Mozzarella (low fat)(melts fantastic)
2 tsp of cumin
Salt and Pepper to taste
In a Bowl mix all together reserving 1/2 cup of cheese.

Tortillas:

9-10 Blue Corn Tortillas sauteed in evoo or enova for about 5 seconds on each side. This is the trick to having soft tortillas to roll up the filling with.

In a casserole dish add 1/2 cup of Enchilada Sauce to the bottom. Trader Joe's makes a great sauce in a jar. Then fill each tortilla with about 3-4 tbs of filling, roll place in the baking dish. Top with remaining sauce and cheese, cover with foil and bake at 350 for 20 minutes.
