Brunch Recipe

Grilled Lemon Oregano Chicken and Warm Pasta Salad:

2 chicken breast marinated in Evoo, oregano, lemon juice, zest, salt and pepper.
Marinate for 1/2-2 hours. Grill until done. 8-10 per side.

1/2 lb of Whole Wheat Penne Pasta. Cook as directed. Add a 1/8 cup of salt once water is boiling and evoo to flavor the pasta. Drain. Let come to room temperature.

In the meantime, while pasta is cooking, cut fresh veggies. 2 cups worth.
I used carrots, zucchini, olives, broccoli, thinly sliced red onion & fennel. All even portions. Once the pasta is at room temp add veggies along with good evoo coat really well, salt, pepper, fresh dill, parsley, red chili flakes, celery salt, garlic powder thyme, & lemon juice with zest of one lemon. Toss and taste for seasoning.

Serve with grilled chicken and top with Shaved Parmesan. Very yummy and you feel good about eating it!

evoo= extra virgin olive oil.


This is why I love this time of year. I planted sweet faced Pansies, Herbs, & Marigolds all over the yard Saturday. It was gorgeous this weekend. And since the paper finally made up it's mind it was not raining I had a brunch. Patricia (the best part of L'Bel) headed out from Downtown. My sassy, salsa buddy.

When she arrived at noon we thought we really needed to work up an appetite so the 3 of us...Meg, Patty and I and headed to Kohl's for their 30% sales. I went there for shoes ( 1 pair) and ended up with 7 tops and 3 for Megan. Patricia left with a bagful too. Shh. Don't tell Paddy. So after 1 hour and 45 minutes we were hungry. I came home and made what you see up top.

It's back to healthy eating. I ate 3 more of Megan's cupcakes from Friday and cornbread with real butter all day yesterday. Oh and an Oreo. It's beginning to show. Look at my arms. Fatty.





This was a fabulous Sunday afternoon. We ate lunch out by the pool, sunbathed, drank herbal ice tea, read Magazines, & love Horoscopes. Talked about Boys, laughed. Hit the spa & none of us fell out this time!Pat & the Cat happily left us alone and snuggled side by side watching Nascar. It was a great, great day.
