Monday Supper

Perfect Roasted Chicken:

Whole chicken split
Wash, drizzle with good extra virgin olive oil (locally, Bariani's is my fave)
add a good amount of your favorite seasoning on all sides
(My house seasoning is garlic powder, kosher salt, fresh ground pepper, paprika & red chili flakes)
Roast at 400 for 45 minutes
When done let set for 10 minutes before carving

Fennel, Onion and Orange Salad:

2 whole fennel bulbs very thinly sliced
1/2 of a sweet white onion thinly sliced
1 large orange peeled and sliced
Italian Parsley
Dressing, Juice of 2 lemons with zest
1/2 tsp kosher salt and 1/2 tsp fresh ground pepper
Toss

Braised Yukon Potatoes in Olive Oil

4 Yukon Gold potatoes (large) sliced about 1/4 inch thick
Grill or broil on each side for about 3 min on each side
On a baking sheet lay out potatoes in a single layer
Cover Potatoes with a good quality extra virgin olive oil
(about 1/2 way up the potatoes)
garlic,thyme, parsley, salt and pepper

Roast at 325 for 40 minutes.

Serves 4-6

For a vegetarian twist make with grilled Tofu or pair with a hearty fish.. swordfish or Salmon.

This dinner was so good and full of flavor. Quick, healthy and mostly..DELICIOUS!
