Hmm What's for Dinner? In 10 minutes or less?
I needed a Healthy quick dinner and this what my pantry, fridge & I came up with-
Fusion Pasta: Makes a great pasta salad the next day for lunch. Just add a bit more evoo to liven it up.
Lemon Pepper Parpadelle 1 pkg
Frozen shrimp 1 bag
Fresh chopped garlic 1 clove
Fresh Shallot 1 small
1/4 of a red onion thinly sliced
Fresh Italian Parsely
Fresh Cilantro
Fresh Lemon Thyme
1/4 tsp red chile flakes
Kosher Salt & Fresh ground pepper to taste
Juice and zest of 1 lime
Grated Myzithra cheese
Evoo
Splash of dry white wine
Boil Pasta and while that is going on sautee in evoo the garlic, onion, and shallots over med high heat careful not to burn garlic. Add pasta, wine and a little pasta water to thicken sauce. Add shrimp to pasta water and boil for 2 minutes. Add to pasta. Add herbs and toss. Top with chesse, Serve and chow down. :)
