Pork Chips with Roasted Baby Squash






Very thin boneless pork loin chops that were brushed with Mustard Aioli, then dipped in homemade breadcrumbs that were seasoned with fresh parsley, garlic powder, sea salt, & pepper. Sauteed for 2 minutes per side in about 3 TB of canola. Crispy brown. Served with baby squash tossed in extra virgin olive oil, garlic, lemons, sea salt, & pepper that were roasted at 375 for 30 minutes.

doggy: they're so thin & crispy we named them pork chips. I've done them with Panko too. A little lighter. I love homemade breadcrumbs. Potato chops?

What a great idea, did you just slice up the pork from a larger cut or have your butcher do it?

Dining: No I bought package this way. there about 1/4 inch thick & cook up very quickly.
