Wild rice & Free Range Chicken Salad

1 mango cut and chopped
raisins
craisins
spring onions sliced
celery finely diced
fresh Italian Parsely
wild rice, 2 cups cooked
rotiserrie style organic chicken quarter, skinned and shredded

dressing is evoo, juice of 4 small lemons with zest or 2 big, salt and pepper to taste.

I am sending this on a thinly sliced bagel to school with Meg. All kids should eat well and healthy. Happy Hump day
