Simple Delish One Pan Dish

German Potato Salad Meets Warm Spinach Salad meets Pork Scallopini






Fried 3 pieces of bacon. Drained. In reserved Bacon fat I sauteed 1 shallot, then added mushrooms till lightly browned. Removed both with a slotted spoon. Sliced 4 small yukon/red potatoes thin. Added taters to the reserved bacon fat and touch of olive oil and sauteed till crispy. Removed, then added Apple Cider Vinegar to the pan a little chicken stock salt & pepper reduced for a minute or so. Added one package of baby spinach till just wilted then tossed in a bowl with the rest of the veggies & bacon crumbles.

In the same pan I added 2 TB of butter a splash of olive oil & sauteed Pork loin chops that I pounded very thinly with a mallet. Sauteed till golden brown for about 3- 4 minutes total. Those were seasoned with sea salt, pepper, garlic powder and red chili flakes. Poured pan sauce over chops & served with salad. Simple delish one pan dish.

Everything is better with bacon. OOh this should have been "everything is better with bacon 3" damn. ;)
