Spanokopita with Poached Eggs in Hollandaise





I had some fresh Spanokopita I picked up at a local bakery and baked those up till crisp. Then topped with soft poached eggs & fresh Hollandaise (made in the blender) that I seasoned with Chipoltle pepper, lemon juice, s&p, & a little fresh oregano & thyme.


Mmmmm. The kid gobbled it down.

how do you make hollandaise in the blender, it has egg yolks that need to be warmed up? this looks really, really good.

its the hot melted butter that you stream in. It's the way I learned how years ago. it was pretty tasty.
